This super bowl chili recipe is super easy and cheap to make and perfect for any Super Bowl party; serves 6-8.
Prep time: 5-10 minutes
Cooking time: 45 minutes
1 pound ground pork
1 pound lean ground beef
A pack of shallots or scallions
1 large green pepper
2 cans tomato soup
2 cans red kidney beans (rinsed)
1 cup frozen kernel corn (optional)
1 teaspoon each of crushed chillis and chilli powder
2 tablespoons vegetable oil
In a large pot (not skillet), heat 1 tablespoon of vegetable oil medium high
Cut the shallots small and add to pot; cook 3-5 minutes ; dice the green pepper as small as you can and put aside.
Add the pork and beef and simmer until brown about 5 minutes
Add all remaining ingredients and simmer covered for 45 minutes
Optional step: add the frozen kernel corn and simmer 5 more minutes
Serve with fresh, hot crusty bread
Serve with a good Cabernet Sauvignon in plastic party glasses or with beer.
Stuff chili in the hard or soft tacos shells and top with grated cheese.
