Folks, this week I am offering you my fully improvised pasta with onions and mushrooms recipe.
Like my previous pasta with shrimps and scallops recipe, I had lots of onions, shallots, and mushrooms I needed to use rather than let them spoil in the fridge and go to waste.
Prep time, about 5-10 minutes with about another 10-15 minutes for cooking. Approximately 30 minutes total.
Gather the ingredients:
Garlic – 3 cloves
Spanish Onion – half to full medium sized
Shallots – 3 small
Mushrooms – 1 pack
Butter – 1 tablespoon
Olive Oil – 2 tablespoons
White Wine – 1/4 cup
Chicken broth – 1 cup
Red Pepper – half (optional)
Salt and Pepper – to taste
Basilic – 1/4 teaspoon (dried) or 1 teaspoon (fresh)
Oregano – 1/4 teaspoon (dried) or 1 teaspoon (fresh)
Pasta of your choice – half-pound; I used spaghettini but penne work great too
In large pan, heat medium to high, add 1 tablespoon of olive oil and butter, bring to a simmer then cook garlic, onions, and shallots.
Remove garlic when cooked then add mushrooms and let simmer until onions caramelize
Add salt and pepper, basilic, and oregano, simmer for 2 more minutes, stirring
Add chicken broth and white whine and let simmer another 10 minutes.
Add cooked pasta and you can optionally add some red tomato meat sauce for a fabulous pasta with onions and mushrooms recipe!
