Kickass Three Egg Omelette Recipe

Need a quick three egg omelette recipe that even an 11 year old can make?  Try this one.

Prep time:  10 minutes; serves 1

Ingredients:

  • 3 large eggs; mixed in a bowl with 1/8 cup of coffee or table cream
  • 2 finely chopped shallots or scallions
  • 1/4 finely chopped Spanish onion
  • 1/4 finely chopped orange pepper
  • 2 tablespoon olive or canola oil
  • Salt and pepper to taste

Instructions:

  1. Warm non-stick skillet to medium high and add oil
  2. Fry shallots, onions until almost golden brown
  3. Add diced pepper and fry for 3-5 minutes until caramelized, remove ingredients from skillet
  4. Add tablespoon of oil, warm for 30 seconds, then add egg
  5. When egg is semi-cooked or begins to bubble, add cooked ingredients, then fold egg in half; cook for 30 seconds
  6. Flip egg and cook for 20 more seconds
  7. Serve hot

 Optional:

  • Add 1/3 cup shredded Mozzarella or Monterrey Jack cheese before folding egg
  • Serve with buttered toast
  • Add ketchup as needed
