Bad Ass Fried Rice for Any Kick Ass Party
With Super Bowl Sunday tomorrow, need to tally up the pregame party food plans with some Bad Ass Fried Rice for Any Kick Ass Party.  This is an easy recipe that anyone can prepare.  Match it with some super bowl chili.

 

Prep time: 30 minutes

Ingredients

3 or 4 large cloves of garlic

4 shallots or scallions

3/4 Spanish onion

3-4 medium to large sized eggs

3 tablespoons olive oil.

1 large orange pepper (or yellow or red)

Salt and pepper to taste

2 pinches of basil and oregano each.

1 sprig of fresh parsley (if available)

2 pinches of Spanish saffron

Several dabs of soy sauce

 

Instructions

Warm a large skillet to medium high with 2 tablespoons of olive oil.

Add the garlic – don’t cut the garlic too fine; you will remove these before adding other ingredients and before they burn.  Just cut them into large chunks or wedges.

Once garlic is browned, remove from skillet and dispose, keeping the oil.  Be careful not to spill any of the oil on the burner.

Add onions and shallots, cook until almost burned (dark brown) then add another tablespoon of olive oil.

Add zuccinis and cook until light brown.  This is one of the secrets to having bad ass fried rice.

Add seasoning; salt and pepper to taste, some basil and oregano.

Add diced peppers – they will water a little.  Let simmer for 5-7 minutes then

Add 2-3 chopped fried eggs and drizzle with a little soy sauce (around 5 -10 drops) then raise the heat a little and add final tablespoon of olive oil.  Stir for 2-3 minutes.

Add fried rice (ready beforehand); Basmati, Jasmine, and even Uncle Ben’s rice will do just fine.  Stir for 5 minutes.

Then serve.

Serve your bad ass fried rice with Chilled Chardonnay.
